Why this conversion matters in chemistry
EU food labels are mandated in kilojoules (with kcal alongside under EU Regulation 1169/2011); US Nutrition Facts panels lead with Calories. A 250 Cal granola bar (250 kcal, or 250,000 cal) is 1046 kJ on the dual-labeled package shipped into the EU. The constant of 0.004184 kJ per calorie comes from the IUPAC thermochemical-calorie definition (1 cal = 4.184 J exactly). Multiplying by it is the usual step that takes legacy calorimetry or older biochemistry data into the kJ units modern chemistry tables and journals expect.

Where the factor comes from
The calorie stopped being a measurement long before it stopped being used. Its original sense — the heat needed to warm one gram of water by one degree — depends on which degree you pick, because water's specific heat drifts with temperature. The fix was to abandon the water and pin the calorie onto the joule outright. The thermochemical calorie is now exactly 4.184 J by convention, and the unit algebra is one prefix away: 4.184 J/cal × 1 kJ / 1000 J = 0.004184 kJ/cal, exact and terminating. Two rivals survive in older print. The IT calorie is exactly 4.1868 J, fixed for steam-table work; the 15 °C calorie, near 4.1855 J, remains a measured quantity because it still refers to real water. Which one a table meant decides whether your factor is exact.
Precision and significant figures
Nothing is lost in the arithmetic. 0.004184 terminates, so a result carries exactly the figures the calorie value brought with it, and the interesting uncertainty sits upstream. Choosing between the thermochemical and IT calorie moves an answer by 0.067 percent, which outranks any rounding you would do at four figures and stays invisible unless the source says which calorie it meant. Bench calorimetry rarely justifies more than three or four significant figures in any case: a bomb calorimeter's heat capacity comes from a benzoic acid standardization and carries a few tenths of a percent, and a coffee-cup calorimeter is doing well to reach two. Quote the kJ result no more precisely than the calorimetry behind it.

Common mistakes
The food Calorie is a kilocalorie
A capital-C Calorie on a nutrition panel means a kilocalorie, so the printed number is already 1000 cal. Apply 0.004184 to it as written and the answer comes out a thousandfold small. The tell is magnitude rather than arithmetic — dietary energies land in the hundreds to thousands of kJ, so any panel figure converting to single-digit kJ has skipped the kilo somewhere.
Old tables rarely name their calorie
Thermochemical, IT and 15 °C calories differ by a little under a tenth of a percent, and a heat of formation copied from a mid-century compilation seldom says which was intended. For one value that discrepancy is noise; in a Hess-law cycle where large terms cancel to a small residual, it is not. Where the source is silent, thermochemical is the safer default, and the assumption belongs in your notes.
Degrees in a denominator are intervals
Specific heat arrives as 1 cal/(g·°C) for water and becomes 4.184 J/(g·°C) by the same factor, because the °C there is a temperature difference and nothing shifts by 273.15. The absolute-temperature correction belongs to absolute temperatures only. Working it into a per-degree quantity is a reliable way to turn a clean unit conversion into a badly wrong specific heat.
